In Amma's kitchen, haldi isn't an ingredient you remember to add. It's just there: a pinch in the dal, a little in the sabzi, a spoonful in warm milk before bed.

A pinch in everything

Most of our everyday cooking starts the same way: ghee in the kadhai, jeera crackling, and then haldi. It gives dal its warm colour and a gentle, earthy taste that you only notice when it's missing.

Pure turmeric powder has a warm, slightly earthy colour. When a packet looks almost neon, it's worth reading the label. Ours is just dried turmeric root, ground in small batches. Nothing else.
